Why we like it

Squeezing the zucchini dry is the key to crisp fritters, and parmesan and almond flour bind them without wheat flour. Smoked salmon adds protein and omega-3 fats, and lemon and dill keep it fresh.

Ingredients

  • 2 medium zucchini
  • 2 eggs
  • 50g parmesan (grated)
  • 2 tbsp almond flour
  • 2 scallions
  • Salt, pepper, garlic powder
  • 2 tbsp olive oil
  • 100g smoked salmon
  • 2 tbsp sour cream
  • Fresh dill
  • Lemon

Method

  1. Grate zucchini. Place in a cloth and squeeze out as much water as possible — very important.
  2. Mix squeezed zucchini with eggs, parmesan, almond flour, scallions and seasoning.
  3. Heat olive oil in a pan over medium heat.
  4. Spoon mixture into pan, flatten gently. Cook 3-4 minutes each side until golden.
  5. Drain on paper towels.
  6. Stack fritters on a plate. Top with smoked salmon, a dollop of sour cream.
  7. Garnish with fresh dill and lemon wedge.
