Why we like it

Baking softens the avocado and sets the egg, so each half is creamy and rich. Avocado is a source of fiber and potassium and is naturally low in carbs, and the eggs add protein.

Ingredients

  • 1 large avocado
  • 2 eggs
  • Salt, pepper, red pepper flakes
  • ½ lime
  • Fresh cilantro
  • Optional: crispy bacon bits

Method

  1. Preheat oven to 220°C / 425°F.
  2. Halve avocado and remove stone. Scoop out a little extra flesh to make room for the egg.
  3. Place avocado halves in a baking dish — use scrunched foil to keep them level.
  4. Crack one egg into each avocado half. Season with salt and pepper.
  5. Bake 12-15 minutes — 12 for runny yolk, 15 for set.
  6. Remove from oven. Squeeze lime juice over.
  7. Top with red pepper flakes, fresh cilantro and bacon bits if using.
