Why we like it

Walnuts make a creamy, slightly earthy pesto that costs less than pine nuts, and parmesan and garlic give it depth. Walnuts contain omega-3 fats, and whole-grain pasta adds fiber. Ready in about 20 minutes.

Ingredients

  • 80g whole grain pasta
  • 40g walnuts
  • 30g parmesan
  • Large handful fresh basil
  • 1 garlic clove
  • 3 tbsp olive oil
  • Salt and pepper
  • Cherry tomatoes to serve
  • Extra parmesan to finish

Method

  1. Cook pasta in well-salted water until al dente.
  2. Toast walnuts in a dry pan 2-3 minutes until fragrant. Allow to cool.
  3. Blend walnuts, basil, garlic, parmesan and 2 tbsp olive oil until a rough paste.
  4. Add final tbsp olive oil while blending. Season generously.
  5. Reserve a cup of pasta water before draining.
  6. Toss hot pasta with pesto. Add pasta water to loosen if needed.
  7. Serve topped with halved cherry tomatoes and extra parmesan.
