Why we like it

Eggs bring protein, avocado adds creaminess and monounsaturated fat, and whole-grain toast adds fiber and crunch. Lemon, red pepper flakes and tomatoes keep it bright. Ready in under 15 minutes.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • ½ lemon
  • Salt, pepper, red pepper flakes
  • 1 tsp olive oil
  • Small handful cherry tomatoes

Method

  1. Toast the bread until golden and firm.
  2. Halve the avocado, remove stone, scoop flesh into a bowl.
  3. Add lemon juice, salt and pepper. Mash with a fork to your preferred texture — chunky or smooth.
  4. Heat olive oil in a non-stick pan over medium heat.
  5. Crack eggs in. For poached: simmer water with vinegar, swirl and drop egg in for 3 minutes. For fried: cook 3-4 minutes until whites are set.
  6. Spread avocado generously on toast.
  7. Top with eggs, cherry tomatoes, salt, pepper and red pepper flakes.
