Why we like it

Sardines are rich and savory, and capers, onion and lemon cut through the oil. Canned sardines contain omega-3 fats and protein, and this is a 5-minute pantry meal.

Ingredients

  • 1 can sardines in olive oil
  • 2 slices sourdough bread
  • 1 tbsp capers
  • ½ red onion (thinly sliced)
  • 1 lemon
  • Fresh parsley
  • Dijon mustard
  • Black pepper

Method

  1. Toast sourdough until golden and crisp.
  2. Open sardines. Drain excess oil (or keep it to drizzle over the toast).
  3. Spread a thin layer of Dijon mustard on toast.
  4. Layer sardines on toast — you can leave them whole or break up.
  5. Top with capers and thinly sliced red onion.
  6. Squeeze fresh lemon juice over generously.
  7. Scatter fresh parsley and crack black pepper over.
  8. Serve immediately.
