Why we like it

Tempeh holds its shape in a hot pan and soaks up the soy, sesame and chili sauce. It is a source of plant protein and fiber, and with broccoli and pepper it makes a full meal over rice or noodles.

Ingredients

  • 200g tempeh
  • 1 head broccoli
  • 1 red bell pepper
  • 3 garlic cloves
  • 2cm ginger
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp red pepper flakes
  • 1 tbsp vegetable oil
  • Rice or noodles to serve
  • Scallions

Method

  1. Slice tempeh into cubes or strips.
  2. Mix soy sauce, sesame oil, rice vinegar and chili in a bowl.
  3. Marinate tempeh in half the sauce for 10 minutes.
  4. Heat oil in wok over high heat.
  5. Fry tempeh 3-4 minutes until golden. Remove.
  6. Add garlic and ginger. Stir fry 30 seconds.
  7. Add broccoli and pepper. Stir fry 4 minutes.
  8. Return tempeh and add remaining sauce. Toss 1 minute.
  9. Serve over rice topped with scallions.
