Why we like it

Broccoli stays crisp and bright with a fast, hot cook, while ginger and garlic give the sauce plenty of punch. Tofu or chicken adds protein, and broccoli is high in vitamin C. Ready in about 20 minutes.

Ingredients

  • 200g broccoli florets
  • 150g firm tofu or chicken breast
  • 3cm fresh ginger (grated)
  • 3 garlic cloves (minced)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp honey
  • Sesame seeds
  • Scallions

Method

  1. If using chicken, slice thinly. If using tofu, press dry and cube.
  2. Mix soy sauce, honey and sesame oil in a small bowl. Set aside.
  3. Heat vegetable oil in a wok or large pan over high heat until smoking.
  4. Add protein — cook chicken 4-5 minutes or tofu 3-4 minutes until golden. Remove.
  5. Add ginger and garlic. Stir fry 30 seconds until fragrant.
  6. Add broccoli. Stir fry 4-5 minutes on high heat — you want some char.
  7. Return protein to pan. Pour over sauce. Toss everything together 1 minute.
  8. Serve topped with sesame seeds and sliced scallions.
