Why we like it

A hot sear and a short rest keep the steak juicy, and eggs cooked in the same buttery pan pick up its flavor. High in protein and essentially carb-free, it is ready in under 20 minutes.

Ingredients

  • 200g sirloin steak
  • 3 eggs
  • 2 tbsp butter
  • Fresh thyme
  • Salt and pepper
  • Optional: wilted spinach

Method

  1. Remove steak from fridge 30 minutes before. Season generously.
  2. Heat a pan until smoking. Add 1 tbsp butter.
  3. Cook steak to preference: 2 min each side (rare), 3 min (medium rare), 4 min (medium).
  4. Rest steak 5 minutes.
  5. In same pan, reduce heat to medium. Add remaining butter.
  6. Cook eggs sunny side up 3-4 minutes.
  7. Slice steak. Serve alongside eggs.
  8. Add wilted spinach if desired.
