Why we like it
High-heat roasting gives broccoli crispy, nutty edges that boiling never does, and the tahini dressing adds creaminess. Broccoli is high in vitamin C, and the dish is fully plant-based and low in carbs.
Ingredients
- 1 large head broccoli
- 3 tbsp olive oil
- 3 garlic cloves
- Salt and red pepper flakes
- For tahini dressing: 2 tbsp tahini, 1 lemon, 1 garlic clove, 2 tbsp water
- Toasted pine nuts
- Fresh parsley
Method
- Preheat oven to 220°C / 425°F. Cut broccoli into large florets including stems.
- Toss in olive oil, whole garlic cloves, salt and chili.
- Spread on a baking sheet — do not overcrowd.
- Roast 20-25 minutes until dark and crispy at edges.
- Make dressing: whisk tahini, lemon juice, garlic and water until smooth.
- Arrange roasted broccoli on a plate.
- Drizzle tahini dressing generously.
- Top with pine nuts and fresh parsley.
