Why we like it
Poaching in stock keeps the salmon moist and tender with no splatter, and a quick butter sauce with capers and dill adds richness. Salmon is a source of protein and omega-3 fats, and the plate is low in carbs.
Ingredients
- 200g salmon fillet
- 200g mixed greens (asparagus, broccoli, green beans)
- 250ml vegetable stock
- Slice of lemon
- For sauce: 1 tbsp butter, 1 tsp capers, lemon juice, fresh dill
- Salt and pepper
Method
- Pour stock into a pan. Add lemon slice. Bring to a gentle simmer — not boiling.
- Season salmon. Slide into simmering stock.
- Poach 8-10 minutes until salmon flakes easily. Do not boil.
- Steam vegetables 4-5 minutes until just tender.
- Make sauce: melt butter, add capers and lemon juice.
- Place greens on plate. Carefully remove salmon and place on top.
- Spoon butter sauce over.
- Top with fresh dill.
