Why we like it
Every component brings something different: rich tuna and egg, salty olives, crisp green beans and sweet tomatoes. Tuna and eggs make it high in protein, and it makes a good make-ahead lunch.
Ingredients
- 1 can tuna in olive oil
- 2 eggs
- 100g green beans
- 150g cherry tomatoes
- 8 olives
- ½ red onion
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper
- Fresh basil
Method
- Soft boil eggs 7 minutes. Cool in ice water. Peel and halve.
- Blanch green beans in boiling salted water 3 minutes until tender but with bite. Refresh in cold water.
- Make dressing: whisk olive oil, vinegar and mustard. Season.
- Arrange salad: green beans, tomatoes, onion rings and olives in a bowl.
- Flake tuna over the salad.
- Add eggs.
- Drizzle dressing over everything.
- Top with fresh basil and crack black pepper generously.
