Why we like it
Miso is a fermented soybean paste that gives the broth a deep savory flavor with almost no effort. Silken tofu adds plant protein and a soft texture, and seaweed adds a light taste of the sea.
Ingredients
- 2 tbsp white miso paste
- 500ml water
- 100g silken tofu
- 2 sheets nori (seaweed) or 1 tbsp dried wakame
- 2 scallions
- 1 tsp soy sauce
Method
- Bring water to a simmer — do NOT boil once the miso is in, as boiling dulls its flavor.
- Soak wakame in cold water 5 minutes until expanded, then drain.
- Cut tofu into small cubes.
- Place miso paste in a ladle or small bowl. Add a spoonful of warm water and stir until dissolved.
- Add dissolved miso, tofu and seaweed to the warm water.
- Heat gently for 2-3 minutes until tofu is warmed through.
- Pour into bowls. Top with sliced scallions.
- Serve immediately.
