Why we like it

Cream cheese and coconut oil set firm in the fridge, cacao gives a brownie-like flavor, and the almond coating adds crunch. About 3g carbs each, so they suit a low-carb eating pattern as a small treat.

Ingredients

  • 100g cream cheese
  • 50g coconut oil
  • 2 tbsp almond butter
  • 1 tbsp cacao powder
  • 1 tbsp erythritol or stevia
  • ½ tsp vanilla extract
  • Pinch of salt
  • 30g crushed almonds for coating

Method

  1. Soften cream cheese to room temperature.
  2. Mix cream cheese, softened coconut oil and almond butter until smooth.
  3. Add cacao, sweetener, vanilla and salt. Mix well.
  4. Refrigerate 30 minutes until firm enough to handle.
  5. Roll into small balls.
  6. Roll each ball in crushed almonds.
  7. Refrigerate until firm — at least 1 hour.
  8. Store in an airtight container in fridge for up to 1 week.
