Why we like it

Quick-cooking the liver keeps it tender while the onions cook down until sweet, and sage and balsamic balance its richness. Liver is high in vitamin A, vitamin B12 and iron, and it is very affordable.

Ingredients

  • 200g chicken or lamb liver
  • 2 large onions
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Fresh sage
  • Salt and pepper
  • Splash of balsamic vinegar
  • Mashed potato or bread to serve

Method

  1. Slice onions thinly. Melt butter and oil in a pan over low heat.
  2. Cook onions very slowly 20-25 minutes until golden and sweet.
  3. Add balsamic. Cook 2 more minutes. Remove and keep warm.
  4. Increase heat to high. Pat liver dry.
  5. Season liver. Add to hot pan.
  6. Cook 2-3 minutes each side — do not overcook, liver should be slightly pink inside.
  7. Add sage leaves to pan for final minute.
  8. Serve liver topped with onions immediately.
