Why we like it

Simmering a parmesan rind in the broth gives it a deep savory flavor, and the beans make it creamy and substantial. It is high in fiber and tastes even better the next day.

Ingredients

  • 1 can cannellini beans
  • 200g kale (stalks removed)
  • 1 can chopped tomatoes
  • 1 onion
  • 3 garlic cloves
  • 1 liter vegetable stock
  • 1 tbsp olive oil
  • 1 tsp Italian herbs
  • Salt and pepper
  • Parmesan rind (if available)
  • Crusty bread to serve

Method

  1. Dice onion and mince garlic.
  2. Heat olive oil. Cook onion 5 minutes.
  3. Add garlic and herbs. Cook 1 minute.
  4. Add tomatoes, beans and stock.
  5. Add parmesan rind if using — adds incredible depth.
  6. Simmer 15 minutes.
  7. Add kale and cook 5 minutes until wilted but still bright green.
  8. Remove parmesan rind. Season generously.
  9. Serve with crusty bread and extra olive oil.
