Why we like it

Jackfruit soaks up the smoky cumin and paprika and gives the chili a meaty texture, while two kinds of beans make it thick and rich. About 18g of fiber per serving, and it freezes well.

Ingredients

  • 1 can young jackfruit (in water)
  • 1 can black beans
  • 1 can kidney beans
  • 1 can chopped tomatoes
  • 1 onion
  • 3 garlic cloves
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Salt
  • Rice or baked potato to serve

Method

  1. Drain jackfruit. Shred with two forks — it should resemble pulled meat.
  2. Dice onion and mince garlic.
  3. Heat oil. Cook onion 5 minutes.
  4. Add garlic and spices. Cook 1 minute.
  5. Add shredded jackfruit. Cook 4 minutes until slightly caramelized.
  6. Add all beans and tomatoes. Stir well.
  7. Simmer 20-25 minutes until thickened.
  8. Season generously.
  9. Serve over rice with sour cream and cilantro.
