Why we like it
Blending in ice-cold water makes the hummus light and fluffy, and tahini, lemon and garlic give it a balanced flavor. Chickpeas add plant protein and fiber, and the crudités add crunch.
Ingredients
- 1 can chickpeas
- 2 tbsp tahini
- 1 lemon
- 2 garlic cloves
- 3 tbsp olive oil
- ½ tsp cumin
- Salt
- Ice cold water
- Crudités: carrots, cucumber, bell peppers, celery
Method
- Drain chickpeas, reserving liquid.
- Add chickpeas, tahini, lemon juice, garlic, cumin and salt to a food processor.
- Blend 1 minute.
- With motor running, add olive oil then ice water slowly until very smooth and creamy.
- Taste and adjust: more lemon for brightness, more tahini for richness, more salt as needed.
- Blend a full 3 minutes — the longer you blend the creamier it gets.
- Serve in a bowl with a well in the center. Fill with olive oil and dust with paprika.
- Serve with cut vegetables.
