Why we like it
Smoky mackerel and cream cheese melt into the soft eggs, and fresh chives and parsley lift it. Mackerel contains omega-3 fats, and the dish is high in protein and low in carbs.
Ingredients
- 3 eggs
- 100g smoked mackerel (skin removed)
- Fresh chives
- Fresh parsley
- 1 tbsp butter
- 1 tbsp cream cheese
- Salt and pepper
- Lemon wedge
Method
- Crack eggs into a bowl. Add chopped chives, parsley, salt and pepper. Whisk.
- Flake mackerel into pieces, removing any bones.
- Heat butter in a non-stick pan over medium heat until foaming.
- Pour in egg mixture. Tilt to spread evenly.
- As edges set, use a spatula to draw edges inward while tilting pan.
- When top is almost set, add mackerel and cream cheese to one half.
- Fold omelette over. Slide onto plate.
- Serve with a squeeze of lemon.
