Why we like it
Squid needs only a minute or two in a smoking-hot grill pan to stay tender, and lemon, garlic and red pepper flakes bring plenty of flavor. It is high in protein, low in fat and ready in under 20 minutes.
Ingredients
- 250g cleaned squid (tubes and tentacles)
- Handful arugula
- Cherry tomatoes
- ½ cucumber
- ½ lemon
- 2 tbsp olive oil
- 2 garlic cloves
- Fresh parsley
- Salt, pepper, red pepper flakes
Method
- Score squid tubes with a knife in a cross-hatch pattern.
- Marinate in olive oil, garlic, lemon zest, salt and pepper for 10 minutes.
- Heat a grill pan until smoking hot.
- Cook squid 2-3 minutes — it cooks very quickly and toughens if overdone.
- Arrange arugula, tomatoes and cucumber on a plate.
- Place grilled squid on top.
- Squeeze lemon juice over everything.
- Top with fresh parsley and red pepper flakes.
