Why we like it

Cooking rice in brewed green tea gives a gentle, toasty aroma, and spreading the rice out to cool keeps the grains separate when fried. Eggs add protein and the dish is ready in about 25 minutes.

Ingredients

  • 80g jasmine rice
  • 300ml brewed green tea (cooled slightly)
  • 2 eggs
  • 3 scallions
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp fresh ginger (grated)
  • Sesame seeds

Method

  1. Brew strong green tea. Allow to cool to room temperature.
  2. Cook rice in green tea instead of water — bring to boil then simmer 12 minutes.
  3. Spread cooked rice on a tray and allow to cool completely (cold rice fries better).
  4. Heat oil in a wok over high heat.
  5. Add garlic and ginger. Stir fry 30 seconds.
  6. Add cold rice. Spread and press flat. Leave 2 minutes without stirring to get crispy.
  7. Push rice to sides. Crack eggs into center. Scramble quickly.
  8. Mix eggs through rice. Add soy sauce and sesame oil. Toss.
  9. Top with scallions and sesame seeds.
