Why we like it

Browning the mushrooms well gives them a deep, savory flavor, and garlic, butter and thyme do the rest. Eggs add protein, and it is on the table in under 20 minutes.

Ingredients

  • 200g mixed mushrooms
  • 3 garlic cloves
  • 3 eggs
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Fresh thyme
  • Salt and pepper
  • Sourdough toast to serve

Method

  1. Slice mushrooms. Mince garlic.
  2. Heat butter and oil in a pan over medium-high heat until foaming.
  3. Add mushrooms in a single layer — do not stir for 3 minutes, allowing them to brown.
  4. Stir and add garlic and thyme. Cook 2 more minutes.
  5. Push mushrooms to the side. Crack eggs into the pan.
  6. Cook eggs to your preference — 3 minutes for runny, 5 for set.
  7. Season everything generously.
  8. Serve on sourdough toast.
