Why we like it

Crisp falafel, creamy hummus and fresh cucumber and tomato make a wrap with lots of texture. Chickpeas are a source of plant protein and fiber. Use store-bought falafel for a 10-minute lunch or make your own.

Ingredients

  • 4 falafel balls (store-bought or homemade)
  • 1 large wrap
  • 3 tbsp hummus
  • ¼ cucumber (sliced)
  • 2 tomatoes (sliced)
  • Handful lettuce
  • 2 tbsp tzatziki
  • Fresh parsley
  • Lemon juice

Method

  1. If making falafel: blend chickpeas, parsley, cilantro, garlic, cumin and salt. Form into balls. Fry in oil 3-4 minutes.
  2. Warm wrap briefly in a pan.
  3. Spread hummus generously across the center.
  4. Add lettuce, tomatoes and cucumber.
  5. Place falafel on top — slightly crush them so they stay in the wrap.
  6. Add tzatziki and fresh parsley.
  7. Squeeze lemon juice over.
  8. Roll tightly and slice in half.
