Why we like it
Silky hollandaise, runny yolks and wilted spinach are a classic combination, and making the sauce at home is easier than it looks. Eggs bring protein and choline, and spinach adds folate and vitamin K.
Ingredients
- 2 eggs
- 200g spinach
- 1 English muffin
- For hollandaise: 2 egg yolks, 100g butter, 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- Salt, pepper, paprika
Method
- Make hollandaise: melt butter. Whisk yolks with lemon juice over simmering water until thick. Slowly drizzle in butter whisking constantly. Season.
- Bring a deep pan of water to gentle simmer. Add vinegar.
- Wilt spinach in a pan with a little butter. Season.
- Split and toast muffin.
- Poach eggs: create a gentle swirl, drop eggs in, cook 3 minutes for runny.
- Build: muffin base, spinach, poached eggs.
- Spoon hollandaise generously over eggs.
- Dust with paprika.
