Why we like it

Simmering the chicken on the bone gives a rich, full-bodied broth, and the meat comes out tender enough to shred. Add noodles or rice for a comforting bowl that freezes well.

Ingredients

  • 1 whole chicken or 4 thighs with bones
  • 3 carrots
  • 3 celery stalks
  • 1 onion
  • 4 garlic cloves
  • Fresh parsley and thyme
  • 1 bay leaf
  • Salt and pepper
  • Egg noodles or rice to serve

Method

  1. Place chicken in a large pot. Cover with cold water.
  2. Add vegetables roughly chopped, garlic, herbs and salt.
  3. Bring to boil. Skim any foam from surface.
  4. Reduce heat to a very gentle simmer.
  5. Cook 40-45 minutes until chicken is completely falling apart.
  6. Remove chicken. Shred meat. Discard skin and bones.
  7. Strain broth if desired, or leave vegetables in.
  8. Return chicken to pot. Season.
  9. Cook noodles or rice separately. Add to bowls with hot soup.
