Why we like it

Cooking the onions low and slow turns them jammy and sweet, which pairs well with salty feta and fresh thyme. Eggs bring protein, and the frittata is good warm or cold, so leftovers make an easy lunch.

Ingredients

  • 6 eggs
  • 3 large onions
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 50g feta cheese
  • Handful fresh thyme
  • Salt and pepper
  • Optional: 100g spinach

Method

  1. Slice onions thinly. Heat olive oil in an oven-safe pan over low heat.
  2. Add onions with a pinch of salt and sugar. Cook very slowly 20-25 minutes stirring occasionally until deep golden.
  3. Preheat oven to 180°C / 350°F.
  4. If using spinach, add to pan and stir until wilted.
  5. Whisk eggs with salt and pepper. Pour over onions.
  6. Crumble feta over the top. Add fresh thyme.
  7. Cook on the stovetop 2 minutes until edges set.
  8. Transfer to oven and bake 10-12 minutes until center is just set.
