Why we like it

Good bone broth gives the soup a rich body and savory flavor, and the vegetables add sweetness and color. It is light, easy to make in a big batch and freezes well.

Ingredients

  • 1 liter quality bone broth (or make from bones)
  • 2 carrots
  • 2 celery stalks
  • 1 onion
  • 3 garlic cloves
  • 1 tsp turmeric
  • Fresh ginger
  • 1 tbsp apple cider vinegar
  • Salt and pepper
  • Fresh parsley

Method

  1. Dice all vegetables roughly.
  2. Heat broth in a large pot. Add carrots, celery, onion.
  3. Add garlic, turmeric and grated ginger.
  4. Simmer gently 20-25 minutes until vegetables are soft.
  5. Add apple cider vinegar — this helps extract more minerals.
  6. Season with salt and pepper.
  7. Serve in deep bowls topped with fresh parsley.
  8. Serve hot.
