Why we like it

Lime, cumin and cilantro make the dressing pop, creamy avocado balances the beans, and it is ready in 10 minutes with no cooking. Black beans and avocado make it high in fiber.

Ingredients

  • 1 can black beans (drained)
  • 1 large avocado
  • 1 red bell pepper
  • 100g cherry tomatoes
  • ½ red onion
  • 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Fresh cilantro
  • Salt and red pepper flakes

Method

  1. Drain and rinse black beans.
  2. Dice pepper and onion. Halve tomatoes.
  3. Dice avocado.
  4. Combine beans, pepper, tomatoes and onion in a bowl.
  5. Add avocado gently — you want chunks not mush.
  6. Make dressing: whisk olive oil, lime juice, cumin and salt.
  7. Pour dressing over salad. Toss gently.
  8. Top with fresh cilantro and red pepper flakes.
  9. Serve immediately.
