Why we like it

Cumin, ground coriander, turmeric and cinnamon give the chicken a warm, fragrant crust, and the cool garlic yogurt sauce and crunchy salad balance it. Over 45g protein per serving, which suits a training day.

Ingredients

  • 200g chicken thigh strips
  • 80g basmati rice
  • 1 tsp cumin
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • For garlic sauce: 2 tbsp yogurt, 1 garlic clove, lemon
  • Cucumber, tomato, red onion for salad

Method

  1. Mix all spices with olive oil. Coat chicken thoroughly.
  2. Marinate 10 minutes minimum (overnight is better).
  3. Cook rice.
  4. Heat a pan over high heat. Cook chicken 4-5 minutes each side until charred at edges.
  5. Make garlic sauce: mix yogurt with minced garlic and lemon juice.
  6. Dice cucumber, tomato and onion for salad.
  7. Build bowl: rice base, chicken, salad alongside.
  8. Drizzle garlic sauce generously over chicken.
