Why we like it

Egg whites keep it lean while the single whole egg adds richness and color. Spinach, pepper and feta add flavor and texture, and it is on the plate in about 13 minutes, so it is an easy option before or after a training session.

Ingredients

  • 5 eggs (whites only)
  • 1 whole egg
  • ½ red bell pepper
  • Handful spinach
  • 30g low fat feta or cottage cheese
  • 1 tsp olive oil
  • Salt, pepper, herbs

Method

  1. Separate 5 eggs keeping only the whites. Add 1 whole egg to the whites.
  2. Whisk vigorously with a fork until slightly frothy. Season with salt and pepper.
  3. Dice red bell pepper finely.
  4. Heat olive oil in a non-stick pan over medium heat. Add pepper and cook 2 minutes.
  5. Add spinach and stir until wilted — about 1 minute.
  6. Pour egg mixture over vegetables. Tilt pan to spread evenly.
  7. Cook without stirring 2-3 minutes until edges set. Add feta or cottage cheese.
  8. Fold in half and cook 1 more minute. Serve immediately.
