Why we like it

Lean chicken gives a generous serving of protein, and sweet potato adds carbohydrates, fiber and vitamin A (from beta-carotene). Paprika, cumin and garlic make it taste better than its short ingredient list suggests. A practical plate before or after a training session.

Ingredients

  • 180g chicken breast
  • 1 medium sweet potato (200g)
  • 1 tsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • Salt and pepper
  • Fresh parsley to serve

Method

  1. Preheat oven to 200°C / 400°F. Scrub sweet potato, pierce several times with a fork.
  2. Place sweet potato directly on oven rack. Bake 35-40 minutes until soft inside.
  3. Meanwhile, pound chicken breast to even thickness with a rolling pin.
  4. Mix paprika, garlic powder, cumin, salt and pepper. Coat chicken on both sides.
  5. Heat olive oil in a pan over medium-high heat. Cook chicken 6-7 minutes each side until cooked through (internal temp 75°C / 165°F).
  6. Rest chicken 5 minutes before slicing.
  7. Serve sliced chicken alongside sweet potato split open. Top with fresh parsley.
