Why we like it
Peanut butter, soy, honey, lime and turmeric make a marinade that chars well on the grill or in a pan, and the cucumber salad keeps it fresh. High in protein, with rice on the side.
Ingredients
- 200g chicken breast (cubed)
- For satay marinade: 3 tbsp peanut butter, 2 tbsp soy sauce, 1 tbsp honey, 1 tsp turmeric, 1 tsp cumin, 1 lime, chili
- 80g jasmine rice
- Cucumber and scallion salad
Method
- Mix all marinade ingredients until smooth. Reserve 2 tbsp for dipping sauce.
- Coat chicken thoroughly. Marinate 30 minutes minimum.
- Thread onto skewers.
- Grill or pan cook 4-5 minutes each side until cooked through and caramelized.
- Cook rice.
- Make dipping sauce: thin reserved marinade with hot water until pourable.
- Serve skewers over rice with cucumber salad and dipping sauce.
