Why we like it
Salmon brings protein and omega-3 fats, and quinoa adds protein, fiber and a nutty bite. Crisp-skinned fish, creamy avocado and a squeeze of lemon balance each other, and the whole bowl comes together with one pan and one pot.
Ingredients
- 150g salmon fillet
- 80g quinoa (dry weight)
- 1 handful spinach
- ½ avocado
- ½ lemon
- 1 tbsp olive oil
- Salt and pepper
- ½ tsp garlic powder
Method
- Rinse quinoa under cold water. Add to a pan with 160ml water and a pinch of salt. Bring to boil then simmer covered for 15 minutes until water absorbed.
- Season salmon with garlic powder, salt and pepper. Heat olive oil in a pan over medium-high heat.
- Cook salmon skin-side down for 4 minutes. Flip and cook another 3 minutes until just cooked through.
- Squeeze lemon over salmon while resting.
- Build the bowl — quinoa base, spinach, sliced avocado, salmon on top.
- Drizzle with olive oil and extra lemon. Serve immediately.
