Why we like it

Low, slow cooking turns pork shoulder meltingly tender and easy to shred, and smoked paprika and cumin give it a barbecue flavor. Pork brings plenty of protein and sweet potato adds carbs and fiber, so it is a practical batch-cook for training weeks.

Ingredients

  • 800g pork shoulder
  • 2 sweet potatoes
  • 1 onion
  • 3 garlic cloves
  • 1 can chopped tomatoes
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper

Method

  1. Preheat oven to 160°C / 325°F.
  2. Season pork all over with paprika, cumin, chili, salt and pepper.
  3. Sear in olive oil all sides until browned — 8 minutes.
  4. Add onion, garlic and tomatoes to pot.
  5. Cover tightly and cook in oven 3.5-4 hours until completely falling apart.
  6. Shred pork with forks.
  7. Meanwhile roast sweet potatoes at 200°C / 400°F for 40 minutes.
  8. Serve pulled pork over halved sweet potatoes.
