Why we like it
Banana sweetens the batter, and eggs and protein powder give each serving about 36g of protein. They cook in under 20 minutes and taste like a weekend treat, so they make a good breakfast on a training day.
Ingredients
- 3 eggs
- 1 banana
- 1 scoop vanilla protein powder
- 1 tbsp almond flour
- ½ tsp baking powder
- ½ tsp cinnamon
- 1 tbsp coconut oil
- Toppings: Greek yogurt, berries, honey
Method
- Mash banana thoroughly in a bowl.
- Add eggs and whisk until combined with banana.
- Add protein powder, almond flour, baking powder and cinnamon. Mix well.
- The batter will be thinner than regular pancakes — this is correct.
- Heat coconut oil in a non-stick pan over medium-low heat.
- Pour small amounts of batter — about 3 tbsp per pancake.
- Cook 2-3 minutes until bubbles form on surface and edges look set.
- Flip carefully and cook 1-2 minutes more.
- Stack and top with Greek yogurt, berries and a drizzle of honey.
