Why we like it
Greek yogurt and protein powder replace most of the butter and sugar and keep the muffins moist, and blueberries burst as they bake. The oat flour is simply blended oats, so there is no special shopping.
Ingredients
- 200g Greek yogurt
- 2 eggs
- 1 scoop vanilla protein powder
- 100g oat flour (blended oats)
- 2 tbsp honey
- 1 tsp baking powder
- 100g blueberries
- 1 tsp vanilla
- Pinch salt
Method
- Preheat oven to 180°C / 350°F. Line a muffin pan.
- Whisk Greek yogurt, eggs, honey and vanilla together.
- Add protein powder, oat flour, baking powder and salt. Mix until just combined.
- Fold in blueberries gently.
- Divide between 6 muffin cases.
- Bake 18-20 minutes until a skewer comes out clean.
- Allow to cool 10 minutes before removing.
- Store in an airtight container for up to 4 days.
