Why we like it
Blending the oats makes a smooth batter, and ripe banana sweetens it so there is no added sugar. Eggs add protein, oats add fiber, and the pancakes are done in under 20 minutes. Good before a morning workout.
Ingredients
- 80g rolled oats
- 2 bananas
- 3 eggs
- 1 tsp cinnamon
- ½ tsp vanilla
- Pinch of salt
- Coconut oil for cooking
- Toppings: banana, honey, berries
Method
- Blend oats to a fine flour.
- Add bananas, eggs, cinnamon, vanilla and salt. Blend until smooth.
- The batter should be slightly thicker than regular pancake batter.
- Heat coconut oil in a pan over medium-low heat.
- Pour small amounts of batter. These pancakes need low and slow heat.
- Cook 3-4 minutes until firm enough to flip. They are more delicate than regular pancakes.
- Flip carefully and cook 2 more minutes.
- Serve immediately with fresh banana and honey.
