Beef Heart Steak

Thinly sliced beef heart seared hot with garlic, herbs and lemon. It tastes much like lean steak and usually costs a lot less.

Why we like it

Beef heart is lean and firm, so a fast, hot sear and a short rest keep it tender. It is a source of protein, iron, zinc, selenium and B vitamins, and lemon and fresh herbs keep it bright.

Ingredients

  • 200g beef heart (sliced)
  • 2 garlic cloves
  • 1 tbsp olive oil
  • Fresh thyme and rosemary
  • Salt and pepper
  • Lemon juice

Method

  1. Ask your butcher to slice heart into 1cm steaks. Remove any visible sinew.
  2. Marinate in olive oil, garlic, herbs and lemon juice for 30 minutes.
  3. Heat a pan until very hot.
  4. Cook heart slices 2-3 minutes each side — do not overcook or it toughens.
  5. Rest 2 minutes.
  6. Serve with simple salad or vegetables.
